Snickerdoodles


8 tablespoons butter (1 stick or 1/2 cup) softened
3/4 cup sugar
1 egg
1 egg yolk
1 tsp vanilla
1 2/3 flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg

1/4 cup sugar
1 tablespoon cinnamon

Preheat oven to 375 degrees F. Combine butter and 3/4 cups sugar, and beat until thoroughly blended. Add the egg, egg yolk, vanilla, and beat until light and fluffy. Stir together the flour, baking soda, salt, and nutmeg and add to the first mixture, mixing until thoroughly blended.

Roll pieces of the dough into 1 inch balls between the palms of your hands. Combine remaining 1/4 cup sugar with the cinnamon and roll each ball in sugar-cinnamon mixture. Place 2 inches apart on ungreased cookie sheets and bake 10-12 minutes. Remove from sheets and cool on racks.
