was really yummy. Not low-cal, to be sure, but yummy. We doubled it of course, and (are you sitting down for this?) everyone ate it. I might have cheated a bit by cooking some of the marinated chicken without the filling for some of our more… discriminating eaters, but that doesn’t count, does it? Anyway, I’m saving this recipe for this summer when we have loads of our own fresh basil. And Kateri might just manage to grow a tomato or two.
