Kateri’s Pumpkin Muffins


8 tablespoons butter, softened
3/4 cup brown sugar
1/3 cup molasses
1 cup mashed, cooked pumpkin (canned works!)
1 egg, slightly beaten
1 3/4 cup flour
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp nutmeg

Preheat oven to 400 degrees F. Grease muffin pans or line them with paper baking cups.

Combine the butter, brown sugar, and molasses in a mixing bowl and beat until creamy. Add the pumpkin and the egg and mix well. (The mixture will look curdled at this point, which is okay.) In another mixing bowl combine the flour, salt, baking soda, cinnamon, and nutmeg, and stir with a fork. Add to the creamed mixture and beat about 20 seconds or until batter is smooth (it will be thick).

Spoon into muffin pans and smooth top of batter slightly with wet fingers. Bake for 15 minutes or until toothpick inserted in center of muffin comes out clean. Makes about 10 muffins.
