Artichoke Dip

olive oil

2 cans of quartered artichokes, drained and cut in small pieces

1/3 cup mayonnaise (must be real mayo and low-fat does not work)

garlic…however many cloves you want, cut up

2 cups Italian cheese, shredded (you can use any combination you want…I use a mix of Provolone, Asiago, Romano and mozzarella)

Saute chopped garlic in some olive oil till brown. Add cut up artichokes and cook for about 2 minutes. Remove from heat and stir in mayo and cheese. Put mixture in a baking dish and sprinkle more cheese and fresh ground pepper on top. Bake at 350 till top is golden brown, about 30 mins. Serve with crackers or French bread.
