For all of these reasons, you must try these lovely, easy muffins:
Whole Wheat Muffins
from the King Arthur Flour Baking Book
2 cups whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
2 eggs
1 cup milk
? cup brown sugar
4 tablespoons melted butter or oil (optional)
Combine flour, baking powder, and salt. In a separate bowl, beat eggs and add milk, sugar, and oil (if desired). Pour liquid into dry ingredients and mix just until blended. Fill greased or paper-lined muffin tins about 2/3 full. Bake 20-25 minutes at 400 degrees F.
Variations: Substitute orange juice for the milk, honey for the brown sugar, and add 2 tablespoons grated orange rind or add ? teaspoon ground cinnamon, ? cup chopped apples, and ? chopped nuts.
